Bachelor’s buttons

In our garden (and in our flower beds) we have a few patches of Bachelor’s Buttons (Centaurea cyanus) (My favorite flower ). Two nights ago, we had several antelope come into the garden and rip through that flower patch, trampling, and eating them. Why would antelope like them out of all the things we have on our property??
